Claude is going to help us kick off the 2018 class calendar with another spectacular French pastry class. We’ll start with Mille-feuille (also known as Napoleon) - a classic French pastry made by sandwiching crispy layers of puff pastry with rich Custard Pastry Cream filling, then garnishing the top with glossy Royal Icing. Claude will also prepare Baba Au Rhum (or Savarin) - a small cake made from yeast dough, baked in cylindrical molds, then soaked with sugar syrup flavored with rum. Coffee, tea, and rapture.
