The Merc Meat & Seafood Department is proud to offer the freshest all natural beef, pork and chicken in town. We believe that the best quality meat starts with sustainable suppliers who ensure compassionate and humane treatment of their animals. Because we care, all of our meat receives a 100% vegetarian diet with no growth hormones or antibiotics allowed.

We Are Pleased to Offer Our Customers:

- Locally raised Kansas beef, both grain-finished and grass-finished
- All natural, free-range chicken
- All natural pork, raised in Iowa
- Merc-made sausages
- Fresh-cut steaks and roasts
- High-quality local and organic frozen meats

The only thing missing from the Merc Meat & Seafood Department is the preservatives that other local purveyors have in the vast majority of their products. You won't find any phosphates, nitrates or use of carbon monoxide or other modified atmosphere packaging.

Freshness is the key to quality seafood, so The Merc Meat & Seafood Department is proud to bring you fresh fish and shellfish 4 days a week. Our knowledgeable staff can provide tips for cooking, as well as assist you in selecting some of your new favorites from under the sea.

All New Vegetarian Moroccan

7-9pm

Enjoy exotic flavors for a spring evening. We’ll start with a salad plate of Carrot Salad with Mint; Roasted Eggplant Salad with Harissa; and Sliced Oranges with Black Olives. Then we’ll bring out loaves of freshly baked Moroccan Anise Bread to dip into Bessara (Berber-style Bean Puree). We’ll cap off the evening with an extravagant dessert of Lemon Couscous Cake served with Medjool Date Ice Cream. All the benefits of travel to an exotic land with none of the hassles.

Spring at the Farmers' Market

7-9pm

Join Chef Paige for a celebration of the growers who feed us with an early market menu. You’ll be inspired by fabulous Roasted Beet Salad with Yogurt & Mint (even if you think you don’t like beets); Market Ragout of Spring Vegetables; Orrechiette with Asparagus, Peas & Pancetta; Swiss Chart Tart with Goat Cheese, Currants & Pine Nuts (this alone is worth taking the class), and a sublime finish of Rhubarb Streusel Coffeecake. Hooray for the Farmers’ Market!
