Travel south to the beautiful, delicious and history-rich Yucatán peninsula with Rachel.  The evening will begin with Esquites (a fantastic corn dish with cheese).  Next, experience Mayan cuisine with Papadzules (similar to enchiladas but with a luscious green pepita sauce).  No trip to the Yucatán would be complete without Cochinita Pibil (slow roasted pork in sour orange sauce).  The evening comes to a close with Pay de Coco (classic coconut tart with a nutty almond crust). All recipes free of wheat.
