Simple Spring Salad

For 1 serving:

  • 1 hard boiled egg

  • 2 medium sized radishes

  • 1/3 of a cucumber

  • 3/4 cup shredded iceberg lettuce

  • 2 tablespoons sour cream

  • Salt to taste

    Dice the egg into small cubes. Shred the cucumber and radishes. Mix all ingredients in a bowl, add sour cream and salt. You can add some green onions if you would like.
