Co-op Breaks Ground on New KCK Grocery Store
On Thursday, your co-op and the Unified Government of WyCo/KCK hosted a groundbreaking ceremony to launch construction on the new store at 5th & Minnesota. All together, approximately 250 people were in attendance, including: Mayor David Alvey, Rep. Tom Burroughs, the KCK City Commission, seven of our nine board members, the media and our future neighbors.
Deli Refresh Begins July 7
Your co-op is constantly focused on improving the shopping and dining experience. To that end, we will be updating our deli and back of house production areas.
Phase One of this refresh will begin Sunday, July 7. During this week, our kitchen, bakery and meat & seafood area will receive new walls, floors, fixtures and equipment. In addition, our deli service counter and sandwich station will be updated with new countertops and equipment. In the cafe, we will install a new reverse osmosis water station.
Board of Directors Welcome Two KCK Appointees
As the co-op prepares to open a new store in Kansas City, Kansas, your board of directors recognized the immediate need to seek representation from within the KCK community. To that end, we voted at our April meeting to increase the amount of board seats from seven to nine, and to begin recruiting two new members to fill those seats. Today, we are excited to introduce you to our two new board members, Victor Aguilar and Rachel Jefferson..

The Merc Co+op Earns Sustainability Star Award for Third Time
The Merc Co-op has been selected as a 2019 Co+efficient Sustainability Star! This award recognizes the co-op’s positive impacts on the community and the environment. Co-ops are eligible in only two out of three years – and despite also receiving the award last year, our co-op broke the mold and truly stood out above the rest again in 2018.

After 44 years, your community-owned food co-op is ready to multiply! Your co-op’s Board of Directors and management have achieved alignment to sign a non-binding letter of intent to open a store at the corner of 5th and Minnesota in downtown Kansas City, Kansas. This alignment has been built through a year’s worth of visioning, conversations and feasibility.
Seeking Inclusion Within the Board of Directors
“Everyone Welcome” is a motto the co-op adopted many years ago. We posted it on signs outside the co-op and marched with it on banners in parades. But, this invitation to shop and share in our cooperative is such a tiny piece of the larger work that we must do to become a co-op that truly represents the individuals and needs within our community.
